Dolphins, sea turtles and whales. Oh my!
The recent sprawl of the greater Ft. Myers area includes several very nice outdoor malls. One we frequented for dinner (and dessert at Cold Stone) included a play area with friendly sea creatures. 
It's not the first thing that comes to mind when you say "I swam with a dolphin," but it was still fun.
Plus, swimming with ice cream would be kind of tricky. It's all a matter of priorities.
